La présence de substances immunologiquement apparentées aux O/CCK de vertébrés est détectée chez les crustacés décapodes (Favrel,1988; Turrigiano G.G,1989). Un protocole de purification est même établi pour Palaemon serratus et Nephrops norvegicus (Favrel,1988). Dans un premier temps, nous allons nous attacher à la purification des G/CCK immunologiquement apparentées aux hormones peptidiques de vertébrés (O/CCK"like") chez les deux espèces précitées. Dans un deuxième temps, à l'aide des fractions purifiées, le rôle biologique des G/CCK"Iike" et particulièrement leur action sur la synthèse protéique vont être étudiés. |

It is essential to have simple rapid methods for the determination of fatty acid structures. Traditionally, fatty acids are analysed by gas chromatography using their methyl ester derivatives (FAME). However, their corresponding mass spectra exhibit molecular ions but are usually devoid of ions indicative of structural features and, notably, the position of double bounds on the aliphatic chains [1]. In the most useful approach to structure determination, the carboxyl group is derivatised with a reagent containing a nitrogen atom. Enzymatic hydrolysis of sardine viscera by three broad spectrum proteases was investigated using the pHstat method (24 h, pH 8, 50 degrees C). After hydrolysis, three fractions (sludge, aqueous phase and oily phase) were collected. For each fraction, lipids and phospholipids were quantified and molecular weights of aqueous phase peptides were determined. Under these conditions, the degree of hydrolysis (DH) varied from 1.9% (Flavourzyme), 3.1% (Protamex) and to 3.3% (Alcalase). Dry matter distribution indicated that all hydrolysis performed increased solubilisation of proteins: protein recovery for each hydrolysis ranged from 57.4% to 61.2%. If rays are traditionally fished for their caudal fins, the rest of the body is wasted, except part of the skin that can be transformed into leather. Liver oil of the ray, Himantura bleekeri, was characterized in terms of lipid class composition and fatty acid profile. Liver oil content was high and represented 54% of the liver weight (w/w). Neutral lipids were predominant (92%), major components being triacylglycerols (63%). Other neutral lipids identified were hydrocarbons, sterol esters, mono- and di-acylglycerols, free fatty acids, sterols and glyceryl ethers. A marine-related Trichoderma longibrachiatum strain isolated from mussels in a farming shellfish area was investigated for total lipid (TL) production, total lipid fatty acids (TLFA), and phospholipid fatty acids (PLFA). Fungal biomass was produced from two different marine-like culture ways, on agar surface and submerged fermentations (ASF and SmF, respectively), allowing useful comparisons. The by-products (viscera, heads, backbone and skins) of tongue sole coming from a Senegal frozen fisherie plant, were hydrolized with the Protamex® enzyme.Degrees of hydrolysis of 30 and 19% were obtained respectively with 40°C and 50°C.The results also showed that the proteins contained in these by-products are completely solubilized by the action of this protease at the end of 180 minutes of hydrolysis. The biochemical characterization showed that these hydrolysates are rich in proteins (61%) and minerals (10%). However, the hydrolysates contain peptides of lower molecular sizes 1760Da.Lastly, these hydrolysates have high nutritional value in order to set up table fowls because they have in big quantity 9 essential amino acids for the poultry feed. |

The production by enzymatic treatment of fish protein hydrolysates (FPH) is a promising route to add value to fisheries proteinic co-products (fish frames, heads etc.). Indeed, FPH possess good nutritional properties and biological activities for food and feed uses.
